Squirrels are tossing apples down to Tiko and Maka, who happily chomp them up. They are very small apples, but I've seen them eat 2-3 apiece, a day...this doesn't count the ones they probably eat when I'm not watching.
Should I rake up the apples, or let them eat as many as they want? Neither dog has diarrhea or constipation, everything seems to be coming out just fine.

Unless you see evidence of digestive difficulties, I wouldn't worry about it. The yard where I take the dogs to run has quite a few fruit trees; when the pears and apples are falling from the trees my dogs (and the dogs who live there) lie under the tree and happily gorge themselves on windfall fruit. The only dog I know that's ever had a problem is one with a sensitive tummy who ate a lot of green apples (he was jumping up and pulling them off the tree) who got really gassy for 24 hours following his green apple binge.
